About Schezwan Rice :
It is quite popular on the Indo Chinese restaurant menus. Unlike the regular fried rice, schezwan fried rice is hot & spicy with bursting flavors of ginger, garlic, soya sauce & red chilli paste. Schezwan rice is made by frying rice along with schezwan sauce which is a unique blend of sauces cooked together.
A typical recipe for cooking long-grain white rice uses a 1-to-1.5 ratio, which means you would add 1 cup of rice to 1 1/2 cups of water.
Type of rice – Medium to long grain rice works best. I almost always use Jasmine rice which produces fluffy, sturdy grains that don't clump or fall apart when fried. Short grain rice like sweet/sushi rice or glutinous rice, tends to be softer and stick together.
Ingredients :
- Rice - 1 cup
- Salt
- Garlic - 1 spoon chopped
- Ginger - 1 spoon chopped
- Onion - 1 small
- Spring onion - 1/4 cup
- Cauliflower - 1/4 cup
- Capsicum - half
- Green chili - 1 spoon chopped
- Soya sauce - 1 spoon
- Schezwan chutney - 1 spoon
- Vinegar - half spoon
How To Make Schezwan Rice with step by step :
- Put 3 spoon of oil in big pan.
- On high flame put garlic , ginger , green chili , onions in that toss for 20 sec.
- Put all the chopped vegetables & toss for 30 sec.
- Now put all sources in that.
- All should be on high flame toss for 30 seconds and then put rice and salt.
- cook for 1-2 min. without covering and serve it.
- Your Schezwan rice is ready to eat.
