  • 4 large eggs,
  • 2 tablespoons cooking oil
  • 1 cup diced red onion (about 1 small onion)
  • 1 1/3 cups mixed vegetables
  • 4 cups cooked rice
  • 2 tablespoons soy sauce

Method:

  • Add the rice into a medium saucepan. Add 300ml water and bring to the boil. Reduce the heat, cover it with a plate for 10 minutes. reduce the heat or turn off the flame, drain the excess amount of water, and leave steam to dry.
  • Heat a tablespoon of the oil in a pan over medium heat. Add the eggs and cook, stir it until scrambled. Transfer to a plate and return the pan to the heat.
  • Heat the remaining tablespoon of oil in the pan over high heat. Add the pepper and onion, mixed vegetables then add required quantity of salt and pepper. Fry for 2.5 minutes, then add the garlic and ginger and fry for several minutes.
  • Slow down the heat, add the cooked rice, spring onions scrambled egg, and soy sauce. Toss together and cook for 2-3 minutes, and mix it properly.
